1. It's observable that the sun changes trajectory from day to day throughout the year.

2. It's also observable that the range and variance of that trajectory changes based on distance from the equator.

The question then is, can you explain how the flat-earth models sun-path can account for both of these factors?

No. No flat-earther can answer it, because it's a geometric paradox. It's impossible to create a path for an object above a flat plane that would, from different perspectives and different time-frames, gradually change, return, and repeat.
